Ingredients
  

Fish
  • 4 white fish fillets cod, tilapia or haddock
  • 0.5 cup parmesan cheese grated
  • 0.5 cup breadcrumbs panko preferred
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp lemon juice
  • 1 tbsp parsley chopped
  • 2 lemon wedges for serving

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a bowl mix parmesan cheese, breadcrumbs, garlic powder, paprika, salt, and black pepper.
  3. Pat fish fillets dry and brush lightly with olive oil and lemon juice.
  4. Press the top side of each fillet into the parmesan mixture to coat.
  5. Place fish crust-side up on baking sheet.
  6. Bake for 8–10 minutes until golden and fish flakes easily with a fork.
  7. Garnish with parsley and serve with lemon wedges.

Notes

Use firm white fish fillets about ¾–1 inch thick for best results.
