Ingredients
  

Couscous Salad
  • 1 cup couscous
  • 1 cup boiling water or vegetable broth
  • 0.33 cup sun-dried tomatoes chopped
  • 0.5 cup cucumber diced
  • 0.33 cup feta cheese crumbled
  • 0.25 cup fresh parsley chopped
  • 2 tbsp red onion finely diced
Lemon Dressing
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 clove garlic minced
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Place couscous in a bowl and pour boiling water or broth over it.
  2. Cover and let sit for 5 minutes until liquid is absorbed.
  3. Fluff couscous with a fork.
  4. Add sun-dried tomatoes, cucumber, parsley, and red onion.
  5. Whisk olive oil, lemon juice, garlic, salt, and pepper.
  6. Pour dressing over salad and toss gently.
  7. Fold in feta cheese and serve.

Notes

Serve chilled or at room temperature for best flavor.
