  • 1.5 lb white fish fillets
  • 2 tbsp olive oil
  • 1 onion sliced
  • 3 cloves garlic minced
  • 1.5 cups cherry tomatoes
  • 0.33 cup Kalamata olives sliced
  • 1 tbsp capers
  • 1 lemon juiced and zested

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Sauté onion until softened, then add garlic.
  3. Add tomatoes, olives, capers, and seasonings.
  4. Nestle fish into sauce and cover.
  5. Cook until fish flakes easily, then finish with lemon and herbs.
