Ingredients
  

Pasta
  • 12 oz pasta penne, rotini, or bowties
  • 2 tbsp olive oil
  • 1 lb Italian sausage mild or spicy
  • 1 onion sliced
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 small zucchini sliced
  • 3 cloves garlic minced
  • 14 oz crushed tomatoes
  • 0.5 cup pasta water reserved
  • 1 tsp Italian seasoning
  • 1 tsp basil
  • 0.5 tsp smoked paprika optional
  • salt & pepper to taste
  • red pepper flakes optional
To Finish
  • 0.5 cup parmesan grated
  • fresh basil for garnish
  • olive oil drizzle, optional

Equipment

  • Large skillet
  • Pot for pasta
  • Wooden spoon

Method
 

  1. Cook pasta in salted water; reserve 1/2 cup pasta water and drain.
  2. Heat oil in a skillet, add sausage, and brown well.
  3. Add onion, peppers, and zucchini; sauté until softened.
  4. Add garlic, Italian seasoning, basil, smoked paprika, salt, and pepper; cook 1–2 minutes.
  5. Stir in crushed tomatoes and pasta water; simmer 5 minutes.
  6. Add cooked pasta and toss to combine.
  7. Serve with parmesan, basil, and optional olive oil drizzle.

Notes

Stir pasta into the sauce immediately so it absorbs flavor. Add red pepper flakes for heat.
