Method
- Cook pasta in salted water; reserve 1/2 cup pasta water and drain.
- Heat oil in a skillet, add sausage, and brown well.
- Add onion, peppers, and zucchini; sauté until softened.
- Add garlic, Italian seasoning, basil, smoked paprika, salt, and pepper; cook 1–2 minutes.
- Stir in crushed tomatoes and pasta water; simmer 5 minutes.
- Add cooked pasta and toss to combine.
- Serve with parmesan, basil, and optional olive oil drizzle.
Notes
Stir pasta into the sauce immediately so it absorbs flavor. Add red pepper flakes for heat.
