Ingredients
  

  • 1 lb ground beef
  • 0.25 cup white rice uncooked
  • 1 egg
  • 0.5 cup onion finely chopped
  • 2 cloves garlic minced
  • 0.25 cup fresh cilantro chopped
  • 6 cups chicken broth
  • 2 cups tomatoes chopped or canned
  • 2 carrots sliced
  • 2 potatoes diced
  • 1 zucchini sliced
  • 1 tsp cumin
  • 1 tsp oregano dried
  • 1 tbsp olive oil
  • salt and pepper to taste

Equipment

  • Large soup pot
  • Mixing bowl
  • Wooden spoon

Method
 

  1. Mix meatball ingredients and form into balls.
  2. Sauté onion and garlic in olive oil.
  3. Add tomatoes and broth; bring to simmer.
  4. Add meatballs and simmer gently.
  5. Add vegetables and cook until tender.
  6. Season and serve hot.

Notes

Do not boil aggressively to keep meatballs tender.
