Ingredients
  

Casserole Base
  • 1 lb bacon cooked and crumbled
  • 1 lb breakfast sausage cooked and crumbled
  • 30 oz frozen shredded hash browns thawed
  • 9 eggs large
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Swiss cheese
  • 2 cups cottage cheese
  • 1.25 cups milk
  • 0.5 cup green onions chopped
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder optional
  • 0.5 tsp paprika optional

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. Cook bacon until crispy, crumble, and set aside.
  3. Cook breakfast sausage until browned, drain, and set aside.
  4. Spread thawed hash browns evenly in the baking dish.
  5. Layer sausage and bacon over hash browns.
  6. Sprinkle cheddar and Swiss cheese evenly on top.
  7. Whisk eggs, cottage cheese, milk, green onions, salt, pepper, garlic powder, and paprika together.
  8. Pour egg mixture evenly over casserole layers.
  9. Bake uncovered for 45–50 minutes until center is set and top is golden.
  10. Rest 10 minutes before slicing and serving.

Notes

Perfect for overnight prep—assemble the casserole the night before and refrigerate until ready to bake.
