Ingredients
  

Crepes
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1.25 cups milk
  • 0.5 cup water
  • 2 tbsp unsalted butter melted
  • 1 tbsp granulated sugar
  • 0.25 tsp salt
  • 0.5 tsp vanilla extract optional
Apple Cinnamon Filling
  • 4 medium apples peeled, cored, sliced
  • 3 tbsp unsalted butter
  • 0.25 cup brown sugar packed
  • 1.5 tsp ground cinnamon
  • 0.5 tsp ground nutmeg optional
  • 1 tbsp lemon juice
  • pinch of salt

  • Non-stick skillet or crepe pan
  • Large skillet for filling

Method
 

  1. Whisk crepe ingredients until smooth. Rest batter in fridge for 30 minutes.
  2. In a skillet, melt butter over medium heat. Add apples, brown sugar, cinnamon, nutmeg, lemon juice, and salt. Cook 8-10 minutes until tender.
  3. Heat crepe pan over medium, butter lightly. Pour 1/4 cup batter, swirl to coat. Cook 1-2 minutes per side until golden.
  4. Fill each crepe with apple mixture, fold or roll.
  5. Dust with powdered sugar and serve warm.

Notes

Resting batter is key for tender crepes. Use firm apples to avoid mushiness. Reheat leftovers gently.
