- Whisk crepe ingredients until smooth. Rest batter in fridge for 30 minutes.
- In a skillet, melt butter over medium heat. Add apples, brown sugar, cinnamon, nutmeg, lemon juice, and salt. Cook 8-10 minutes until tender.
- Heat crepe pan over medium, butter lightly. Pour 1/4 cup batter, swirl to coat. Cook 1-2 minutes per side until golden.
- Fill each crepe with apple mixture, fold or roll.
- Dust with powdered sugar and serve warm.
Notes
Resting batter is key for tender crepes. Use firm apples to avoid mushiness. Reheat leftovers gently.
