Ingredients
  

  • 1 package gluten-free puff pastry thawed
  • 2 cups milk or dairy-free alternative
  • 4 large egg yolks
  • 0.5 cup sugar
  • 3 tbsp cornstarch
  • 1 tsp vanilla extract
  • Pinch salt
  • 2 medium apples thinly sliced
  • 2 tbsp butter
  • 2 tbsp sugar
  • 0.5 tsp cinnamon
  • Powdered sugar for dusting

Method
 

  1. Preheat oven to 400°F (200°C) and bake puff pastry rectangles until golden and crisp; cool completely.
  2. Heat milk over medium heat. Whisk egg yolks, sugar, cornstarch, and salt. Slowly combine with milk, cook until thickened; stir in vanilla. Chill.
  3. Caramelize apples with butter, sugar, and cinnamon until tender; cool slightly.
  4. Assemble layers: puff pastry, custard, caramelized apples; repeat and finish with puff pastry on top.
  5. Dust with powdered sugar and serve immediately.

Notes

Assemble just before serving to keep puff pastry crisp.
