- Preheat oven to 400°F (200°C) and bake puff pastry rectangles until golden and crisp; cool completely.
- Heat milk over medium heat. Whisk egg yolks, sugar, cornstarch, and salt. Slowly combine with milk, cook until thickened; stir in vanilla. Chill.
- Caramelize apples with butter, sugar, and cinnamon until tender; cool slightly.
- Assemble layers: puff pastry, custard, caramelized apples; repeat and finish with puff pastry on top.
- Dust with powdered sugar and serve immediately.
