Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 2 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.25 tsp ground allspice
Wet Ingredients
  • 0.5 cup unsalted butter softened
  • 0.75 cup packed brown sugar
  • 0.5 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 0.5 cup unsweetened applesauce
  • 2 cups peeled and diced apples about 2-3 medium
Cinnamon Glaze
  • 1 cup powdered sugar
  • 0.5 tsp ground cinnamon
  • 2-3 tbsp milk or heavy cream
  • 0.5 tsp vanilla extract

Equipment

  • 9x5-inch loaf pan
  • Mixing bowls

Method
 

  1. Preheat oven to 350°F (175°C). Grease and line a 9x5-inch loaf pan.
  2. Whisk dry ingredients: flour, baking soda, baking powder, salt, and spices.
  3. Cream butter and sugars until fluffy. Add eggs, vanilla, and applesauce.
  4. Mix in dry ingredients until just combined. Fold in diced apples.
  5. Pour into pan and bake 50-65 minutes until toothpick is clean.
  6. Cool completely on wire rack.
  7. Whisk glaze ingredients and drizzle over cooled cake.

Notes

Use tart apples for best flavor balance. Glaze can be thinned or thickened with more/less milk.
