Ingredients
  

Roux
  • 0.5 cup vegetable oil
  • 0.5 cup all-purpose flour
Gumbo
  • 1 lb andouille sausage sliced
  • 1 lb chicken cut into pieces
  • 1 cup onion diced
  • 0.5 cup celery diced
  • 0.5 cup bell pepper diced
  • 4 cloves garlic minced
  • 6 cups chicken broth
  • 1 cup okra sliced
  • 2 tsp Cajun seasoning
  • 1 tsp smoked paprika
  • 0.5 tsp thyme
  • 2 bay leaves

Equipment

  • Large pot
  • Wooden spoon
  • Knife
  • Cutting board

Method
 

  1. Make roux by cooking oil and flour until dark brown.
  2. Add sausage and chicken, cook until browned.
  3. Add vegetables and cook until softened.
  4. Add broth and seasonings, stir well.
  5. Simmer 45–60 minutes.
  6. Serve over rice with garnish.

Notes

Roux must be stirred constantly to avoid burning.
