Authentic Sopa de Ajo

Ingredients
  

  • 4 tbsp extra virgin olive oil
  • 6 cloves garlic thinly sliced
  • 3 cups day-old rustic bread cubed
  • 1 tbsp smoked paprika sweet
  • 6 cups water or light broth
  • salt to taste
  • 4 eggs whole

Equipment

  • Heavy pot or Dutch oven

Method
 

  1. Heat olive oil over medium-low heat.
  2. Add garlic and cook gently until lightly golden.
  3. Remove from heat and stir in smoked paprika.
  4. Add bread and return to heat, stirring well.
  5. Pour in water or broth and season with salt.
  6. Simmer for 20 minutes until slightly thickened.
  7. Crack eggs into soup and cook gently until set.

Notes

Serve immediately with crusty bread.
