- Hard-boil and peel the eggs, then halve lengthwise and remove yolks.
- Mash avocado with yolks until smooth.
- Stir in lime juice, mustard, garlic, cilantro, salt, pepper, and paprika.
- Fill egg whites with the mixture.
- Garnish and serve chilled.
Notes
Use ripe avocado and add lime promptly to prevent browning. Best served fresh.
