Ingredients
  

Main Ingredients
  • 6 large eggs hard-boiled
  • 1 large ripe avocado
  • 1-2 tbsp fresh lime juice
  • 1 tsp Dijon mustard
  • 1 small garlic clove minced
  • 2 tbsp fresh cilantro chopped, optional
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 0.125 tsp smoked paprika plus extra for garnish

Method
 

  1. Hard-boil and peel the eggs, then halve lengthwise and remove yolks.
  2. Mash avocado with yolks until smooth.
  3. Stir in lime juice, mustard, garlic, cilantro, salt, pepper, and paprika.
  4. Fill egg whites with the mixture.
  5. Garnish and serve chilled.

Notes

Use ripe avocado and add lime promptly to prevent browning. Best served fresh.
