Ingredients
  

Salad
  • 1 bunch kale stems removed and chopped
  • 1 avocado sliced
  • 0.5 cup parmesan cheese grated
  • 1 cup croutons
  • 1 tbsp olive oil
  • 1 tsp lemon juice
Avocado Caesar Dressing
  • 1 ripe avocado
  • 2 tbsp olive oil
  • 1 tbsp Dijon mustard
  • 1 garlic clove minced
  • 2 tbsp lemon juice
  • 2 tbsp parmesan cheese grated
  • 4 tbsp water to thin dressing
Sweet Potato Fries
  • 2 sweet potatoes cut into fries
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Equipment

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Cut sweet potatoes into fries and toss with olive oil, paprika, garlic powder, salt, and pepper.
  3. Spread fries in a single layer on the baking sheet and roast for 25–30 minutes, flipping halfway through.
  4. Place chopped kale in a large bowl and massage with olive oil and lemon juice for 1–2 minutes.
  5. Blend avocado, olive oil, Dijon mustard, garlic, lemon juice, parmesan, and water until smooth.
  6. Pour dressing over kale and toss until evenly coated.
  7. Add croutons and parmesan cheese and mix gently.
  8. Serve salad topped with avocado slices and crispy sweet potato fries.

Notes

Massage the kale well to soften it and improve flavor. For a vegan version, replace parmesan with nutritional yeast.
