Method
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Cut sweet potatoes into fries and toss with olive oil, paprika, garlic powder, salt, and pepper.
- Spread fries in a single layer on the baking sheet and roast for 25–30 minutes, flipping halfway through.
- Place chopped kale in a large bowl and massage with olive oil and lemon juice for 1–2 minutes.
- Blend avocado, olive oil, Dijon mustard, garlic, lemon juice, parmesan, and water until smooth.
- Pour dressing over kale and toss until evenly coated.
- Add croutons and parmesan cheese and mix gently.
- Serve salad topped with avocado slices and crispy sweet potato fries.
Notes
Massage the kale well to soften it and improve flavor. For a vegan version, replace parmesan with nutritional yeast.
