- Dice avocado and mango into bite-sized cubes. Halve cherry tomatoes, chop red onion and cilantro, and mince jalapeño if using.
- Whisk together lime juice, olive oil, honey/maple syrup, lime zest, chili flakes, salt, and pepper in a small bowl.
- Gently toss avocado, mango, cherry tomatoes, red onion, cilantro, and jalapeño in a large mixing bowl.
- Drizzle dressing over the salad and toss gently to coat.
- Sprinkle toasted pumpkin seeds on top if desired.
- Serve immediately or chill for 30 minutes before serving.
Notes
For best results, prepare ingredients just before serving to keep avocado fresh.
