- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and coat with cooking spray.
- Set up breading stations: flour with spices in one bowl, whisked eggs in another, panko in the third.
- Dredge chicken in flour, then eggs, then panko, pressing to coat.
- Place on baking sheet, spray tops with oil, and bake 25-30 minutes, flipping halfway.
- In a saucepan, heat honey, hot sauce, vinegar, and butter until melted and combined.
- Drizzle sauce over baked chicken and serve.
