- Preheat oven to 400°F (200°C) and lightly grease a baking dish.
- Place feta in the center and scatter tomatoes around it. Drizzle with olive oil and season.
- Bake for 15 minutes until tomatoes blister and feta softens.
- Stir in spinach until wilted, then create wells and crack eggs into dish.
- Bake 8–12 minutes until egg whites are set and yolks are soft.
Notes
Serve immediately with crusty bread for dipping.
