Main Ingredients
  • 1 block feta cheese about 7 oz
  • 4 large eggs
  • 1.5 cups cherry tomatoes
  • 2 cups fresh spinach
  • 2 cloves garlic minced
  • 3 tbsp olive oil
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp red chili flakes optional

Method
 

  1. Preheat oven to 400°F (200°C) and lightly grease a baking dish.
  2. Place feta in the center and scatter tomatoes around it. Drizzle with olive oil and season.
  3. Bake for 15 minutes until tomatoes blister and feta softens.
  4. Stir in spinach until wilted, then create wells and crack eggs into dish.
  5. Bake 8–12 minutes until egg whites are set and yolks are soft.

Notes

Serve immediately with crusty bread for dipping.
