Ingredients
  

Potatoes
  • 1.5 lbs baby potatoes halved
Feta & Seasoning
  • 8 oz feta cheese block
  • 0.25 cup olive oil
  • 3 cloves garlic minced
  • 1 tsp oregano dried
  • 0.5 tsp chili flakes optional
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 lemon zest
  • 0.5 lemon juice

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Toss potatoes with olive oil, garlic, and seasonings.
  3. Place feta in center of baking dish.
  4. Bake 40–45 minutes, stirring potatoes halfway.
  5. Add lemon zest and juice.
  6. Smash feta slightly and serve.

Notes

Serve warm. Add olives or tomatoes for variation.
