- Preheat oven to 425°F (220°C). Line a large baking dish with parchment.
- Add halved potatoes, garlic head, and feta block to the dish.
- Drizzle with olive oil, sprinkle herbs, zest, salt, pepper; squeeze half lemon juice over.
- Toss potatoes to coat, leaving feta and garlic in center.
- Bake 40-50 minutes, stirring potatoes halfway, until crispy and tender.
- Remove, squeeze roasted garlic into dish, mash feta lightly, toss to coat.
- Finish with remaining lemon juice, fresh herbs, and olive oil drizzle. Serve warm.
Notes
For extra crispiness, broil 2-3 minutes at the end. Use skin-on potatoes for best texture.
