Ingredients
  

Sushi Rice
  • 2 cups cooked sushi rice
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 0.5 tsp salt
Salmon
  • 1 lb salmon fillet skin removed
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
Sauce & Toppings
  • 0.5 cup mayonnaise
  • 2 tbsp sriracha adjust to taste
  • sesame seeds for garnish
  • green onions sliced

Equipment

  • Baking sheet
  • Mini muffin tin
  • Mixing bowls
  • Fork

Method
 

  1. Season warm sushi rice with vinegar mixture.
  2. Bake salmon at 400°F (200°C) for 12–15 minutes.
  3. Flake salmon and mix lightly.
  4. Mix mayonnaise and sriracha.
  5. Press rice into mini muffin tin.
  6. Top rice with salmon.
  7. Bake assembled bites 8–10 minutes.
  8. Drizzle with spicy mayo and garnish.

Notes

Serve warm. Add avocado after baking if desired.
