Ingredients
  

Cookie Dough
  • 2.25 cups all-purpose flour
  • 2 tsp baking soda
  • 1.5 tsp cinnamon
  • 1.5 tsp ginger
  • 0.5 tsp cloves
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 0.25 cup molasses unsulphured
  • 1 egg large
  • 1 tsp vanilla extract
  • 0.33 cup granulated sugar for rolling

Method
 

  1. Whisk together flour, baking soda, spices, and salt.
  2. Cream butter and brown sugar until fluffy.
  3. Mix in molasses, egg, and vanilla.
  4. Gradually add dry ingredients until dough forms.
  5. Chill dough for at least 1 hour.
  6. Preheat oven to 350°F (175°C).
  7. Roll dough balls in sugar and place on baking sheet.
  8. Bake 9–11 minutes until crackled and set.
  9. Cool briefly, then transfer to wire rack.

Notes

Do not overbake for best chewy texture.
