Method
- Sear short ribs in oil until browned on all sides.
- Sauté onions, carrots, and garlic.
- Add tomato paste, bourbon, broth, balsamic vinegar, brown sugar, Worcestershire, thyme, and bay leaf.
- Return ribs to pot and braise covered at 325°F for 2.5–3 hours.
- Reduce sauce and serve ribs coated in glaze.

Even better the next day after refrigeration.
