Ingredients
  

Meatballs
  • 1 lb ground beef
  • 0.5 cup breadcrumbs
  • 1 egg large
  • 0.25 cup onion finely chopped
  • 2 cloves garlic minced
Sweet Potato Mash
  • 2 lb sweet potatoes peeled and cubed
  • 3 tbsp butter
  • 0.25 cup milk

Method
 

  1. Mix meatball ingredients, form into balls, and bake until cooked through.
  2. Boil sweet potatoes until tender, then mash with butter and milk.
  3. Simmer balsamic glaze ingredients until thickened.
  4. Toss meatballs in glaze and serve over sweet potato mash.

Notes

Use turkey meatballs for a lighter option.
