Ingredients
  

Beef Bourguignon
  • 2.5 lb beef chuck cubed
  • 6 oz bacon lardons
  • 2 tbsp olive oil
  • 2 tbsp all-purpose flour
  • 1 onion chopped
  • 3 cloves garlic minced
  • 3 carrots sliced
  • 3 cups red wine dry
  • 2 cups beef stock
  • 2 tbsp tomato paste
  • 2 bay leaves
  • 1 tsp thyme
  • 8 oz mushrooms
  • 1 cup pearl onions

Equipment

  • Dutch oven
  • Wooden spoon
  • Knife and cutting board

Method
 

  1. Season and flour beef cubes.
  2. Cook bacon until crisp; set aside.
  3. Brown beef in batches and remove.
  4. Cook onion, carrots, garlic, and tomato paste.
  5. Deglaze with red wine.
  6. Add beef, bacon, stock, and herbs; simmer 3 hours.
  7. Add mushrooms and pearl onions; simmer 30 minutes.

Notes

Best served the next day after flavors develop.
