Ingredients
  

Filling
  • 1 can black beans drained
  • 0.5 onion chopped
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 0.5 tsp cumin
  • 0.5 tsp chili powder
  • 0.25 tsp smoked paprika
  • 0.5 cup cheese shredded
Assembly
  • 8-10 tortillas
  • 3 tbsp oil

Method
 

  1. Cook onion and garlic in oil until soft.
  2. Add beans and spices, mash slightly.
  3. Stir in cheese until melted.
  4. Fill and roll tortillas tightly.
  5. Bake at 400°F for 15–20 minutes or fry until crispy.

Notes

Serve with guacamole, salsa, or sour cream.
