Ingredients
  

  • 3.5 cups all-purpose flour
  • 0.25 cup granulated sugar
  • 2.25 tsp active dry yeast 1 packet
  • 0.5 tsp salt
  • 0.5 cup whole milk warm
  • 0.25 cup unsalted butter melted
  • 2 eggs large
  • 1 tsp vanilla extract
  • 1.5 cups blackberries fresh or thawed if frozen
  • 0.25 cup granulated sugar for filling
  • 1 tsp lemon zest
  • 2 tbsp unsalted butter softened, for filling
  • 1 cup powdered sugar for glaze
  • 2-3 tbsp milk or cream, for glaze
  • 0.5 tsp vanilla extract for glaze

Method
 

  1. Combine warm milk, sugar, and yeast; let froth 5–10 minutes.
  2. Mix flour and salt; add eggs, melted butter, vanilla, and yeast mixture to form dough.
  3. Knead dough until smooth; let rise 1–1.5 hours.
  4. Prepare filling by mashing blackberries with sugar, lemon zest, and softened butter.
  5. Roll dough into rectangle; spread filling evenly and roll into a log.
  6. Cut into 12 rolls and place in greased baking pan; let rise 30–40 minutes.
  7. Bake at 375°F (190°C) for 25–28 minutes until golden.
  8. Prepare glaze and drizzle over warm rolls; serve immediately.

Notes

Ensure blackberries are not overly watery to prevent soggy rolls.
