- In a small saucepan, combine blueberries, 2 tbsp honey, and lemon juice. Cook over medium heat for 5-7 minutes until thickened. Cool completely.
- In a bowl, mix Greek yogurt, remaining honey, and vanilla until smooth. Fold in optional chia seeds.
- Fold half the blueberry mixture into the yogurt to create swirls.
- Spoon into silicone molds, top with remaining blueberry mixture, and swirl with a toothpick.
- Freeze for at least 2 hours or until solid.
- Remove from molds and serve.
Notes
For vegan version, use plant-based yogurt and maple syrup. Adjust sweetness based on berry ripeness.
