Ingredients
  

Yogurt Base
  • 2 cups plain Greek yogurt full-fat
  • 1/4 cup honey or maple syrup adjust to taste
  • 1 tsp vanilla extract
Blueberry Swirl
  • 1 cup fresh or frozen blueberries
  • 2 tbsp honey or maple syrup
  • 1 tbsp lemon juice freshly squeezed
  • 1 tbsp chia seeds optional

Equipment

  • Mixing bowl
  • Small saucepan
  • Silicone molds or ice cube tray
  • Spoon or toothpick

Method
 

  1. In a small saucepan, combine blueberries, 2 tbsp honey, and lemon juice. Cook over medium heat for 5-7 minutes until thickened. Cool completely.
  2. In a bowl, mix Greek yogurt, remaining honey, and vanilla until smooth. Fold in optional chia seeds.
  3. Fold half the blueberry mixture into the yogurt to create swirls.
  4. Spoon into silicone molds, top with remaining blueberry mixture, and swirl with a toothpick.
  5. Freeze for at least 2 hours or until solid.
  6. Remove from molds and serve.

Notes

For vegan version, use plant-based yogurt and maple syrup. Adjust sweetness based on berry ripeness.
