Ingredients
  

  • 8 flour tortillas
  • 1 lb breakfast sausage
  • 8 eggs
  • 2 cups shredded cheese divided
  • 0.5 cup onion chopped
  • 2 cloves garlic minced
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 1.5 cups milk
  • 1 cup sour cream
  • 1 cup salsa red or green
  • 1 tsp cumin
  • 1 tsp paprika
  • salt and pepper to taste

Method
 

  1. Cook sausage and set aside.
  2. Scramble eggs gently with onion and garlic.
  3. Fill tortillas and arrange in baking dish.
  4. Prepare creamy salsa sauce.
  5. Pour sauce over enchiladas and top with cheese.
  6. Bake until bubbly and golden.
