Ingredients
  

Cookie Bars
  • 1 cup unsalted butter
  • 0.75 cup brown sugar packed
  • 0.5 cup granulated sugar
  • 0.25 cup honey
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2.25 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
Mix-Ins and Topping
  • 1 cup shelled pistachios roughly chopped
  • 0.75 cup white chocolate chunks optional
  • 1 tbsp honey for drizzle
  • flaky sea salt for finishing

Method
 

  1. Preheat oven to 350°F and line a 9x13-inch baking pan with parchment paper.
  2. Brown the butter in a saucepan until golden and nutty, then cool slightly.
  3. Whisk brown sugar, granulated sugar, honey, and brown butter until smooth.
  4. Add eggs one at a time, then stir in vanilla extract.
  5. Whisk flour, baking powder, and salt separately, then fold into wet ingredients.
  6. Fold in chopped pistachios and white chocolate if using.
  7. Spread evenly into prepared pan and bake for 28–32 minutes.
  8. Cool completely, drizzle with honey, sprinkle flaky sea salt, then slice into bars.

Notes

Slightly underbake for the chewiest texture and use roasted pistachios for the best flavor.
