Ingredients
  

Cookie Dough
  • 1 cup unsalted butter
  • 1 cup brown sugar packed
  • 0.5 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2.25 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1.5 cups toffee bits

Method
 

  1. Brown the butter in a saucepan over medium heat until golden and nutty, then cool slightly.
  2. Whisk browned butter with brown sugar and granulated sugar until smooth.
  3. Add eggs and vanilla extract and mix well.
  4. Whisk flour, baking soda, and salt separately, then combine with wet ingredients.
  5. Fold in toffee bits and chill dough for 30 minutes.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Scoop dough onto baking sheets and bake for 10–12 minutes.
  8. Sprinkle with flaky sea salt if desired and cool before serving.

Notes

Chilling the dough helps create thicker cookies with chewy centers. Watch the butter closely while browning so it doesn’t burn.
