Ingredients
  

Cheesecake Filling
  • 8 oz cream cheese softened
  • 0.25 cup granulated sugar
  • 1 tsp vanilla extract
Cookie Dough
  • 2.25 cups all-purpose flour
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 0.25 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
Caramel Filling
  • 20 soft caramel candies unwrapped

Method
 

  1. Prepare cheesecake filling and freeze portions.
  2. Mix dry ingredients for cookie dough.
  3. Cream butter and sugars, then add egg and vanilla.
  4. Combine wet and dry ingredients.
  5. Stuff dough with cheesecake and caramel.
  6. Chill, then bake until edges are set.

Notes

Slightly underbake for gooey centers.
