Ingredients
  

Beef
  • 1 lb flank steak thinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp sesame oil
  • 2 cloves garlic minced
  • 1 tsp ginger grated
  • 1 tbsp vegetable oil for cooking
Peanut Noodles
  • 8 oz rice noodles
  • 0.5 cup creamy peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tbsp lime juice
  • 1 tsp sesame oil
  • 0.5 tsp chili flakes optional
  • 0.33 cup warm water
Garnish
  • 0.25 cup roasted peanuts chopped
  • 2 green onions sliced
  • 0.25 cup cilantro chopped
  • 1 lime cut into wedges

Method
 

  1. Cook noodles according to package instructions, drain and set aside.
  2. Mix soy sauce, brown sugar, sesame oil, garlic, and ginger and toss with sliced beef.
  3. Whisk peanut butter, soy sauce, honey, lime juice, sesame oil, chili flakes, and warm water to create the peanut sauce.
  4. Heat oil in a skillet over medium-high heat and cook beef until caramelized and browned.
  5. Toss cooked noodles with the peanut sauce until evenly coated.
  6. Divide noodles into bowls and top with caramelized beef.
  7. Garnish with chopped peanuts, green onions, cilantro, and lime wedges before serving.

Add vegetables like bell peppers or snap peas for extra nutrition and color.
