Ingredients
  

  • 1 tart crust prepared
  • 3 yellow onions thinly sliced
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 2 cups butternut squash thinly sliced
  • 3 eggs
  • 1 cup heavy cream
  • 1 cup Gruyère cheese grated
  • 1 tbsp fresh thyme

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Caramelize onions slowly in olive oil and butter.
  3. Roast squash until just tender.
  4. Whisk eggs, cream, thyme, salt, and pepper.
  5. Layer cheese, onions, and squash in crust.
  6. Pour egg mixture over filling.
  7. Bake until set and golden.

Let rest 10 minutes before slicing.
