Ingredients
  

Salad
  • 4-5 large carrots peeled and shredded
  • 2 medium apples cored and grated or diced
  • 0.5 cup walnuts chopped and toasted
  • 0.33 cup raisins or dried cranberries
  • 2 tbsp fresh parsley or chives chopped, optional
Dressing
  • 3 tbsp extra-virgin olive oil
  • 2-3 tbsp fresh lemon juice
  • 1-2 tsp honey or maple syrup adjust to taste
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Equipment

  • Box grater or food processor
  • Large mixing bowl
  • Small bowl for dressing
  • Skillet for toasting walnuts

Method
 

  1. Shred carrots and grate or dice apples. Toss apples with 1 tbsp lemon juice to prevent browning.
  2. Toast walnuts in a dry skillet over medium heat for 3-5 minutes until golden. Cool.
  3. Whisk dressing ingredients in a small bowl until combined.
  4. In a large bowl, mix carrots, apples, walnuts, raisins, and herbs.
  5. Pour dressing over salad and toss to coat. Chill for 30 minutes before serving.

Notes

Best served chilled. Flavors develop over time—great for make-ahead. Use firm apples for best texture.
