- Shred carrots and grate or dice apples. Toss apples with 1 tbsp lemon juice to prevent browning.
- Toast walnuts in a dry skillet over medium heat for 3-5 minutes until golden. Cool.
- Whisk dressing ingredients in a small bowl until combined.
- In a large bowl, mix carrots, apples, walnuts, raisins, and herbs.
- Pour dressing over salad and toss to coat. Chill for 30 minutes before serving.
