Ingredients
  

Salad
  • 3 carrots peeled
  • 2 cucumbers
  • 1 tbsp sesame seeds toasted
  • 2 tbsp fresh parsley or cilantro chopped
Dressing
  • 2 tbsp rice vinegar
  • 1 tbsp olive oil
  • 1 tsp honey or maple syrup
  • 1 garlic clove minced
  • 0.25 tsp salt
  • 0.25 tsp black pepper

Equipment

  • Mixing bowls
  • Vegetable peeler
  • Whisk

Method
 

  1. Peel carrots and slice carrots and cucumbers into ribbons using a vegetable peeler.
  2. Whisk dressing ingredients together.
  3. Toss vegetable ribbons with dressing.
  4. Garnish with sesame seeds and herbs before serving.

Notes

Best served fresh. Keep dressing separate if preparing ahead.
