Ingredients
  

Filling
  • 2 cups cooked chicken cubed
  • 1 cup carrots diced
  • 1 cup peas
  • 0.5 cup celery diced
  • 0.25 cup unsalted butter
  • 0.25 cup all-purpose flour
  • 2 cups chicken broth
  • 0.5 cup milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • to taste salt and pepper
Cheddar Biscuits
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 0.5 cup unsalted butter cold
  • 1 cup cheddar cheese shredded
  • 0.75 cup milk

Method
 

  1. Cook vegetables in butter over medium heat until slightly softened.
  2. Add flour and seasonings, cook 1–2 minutes.
  3. Whisk in chicken broth and milk, simmer until thickened.
  4. Add cubed chicken and season with salt and pepper.
  5. Preheat oven to 400°F (200°C). Pour filling into a greased 9x13 inch dish.
  6. Prepare biscuit dough and drop spoonfuls over filling.
  7. Bake 20–25 minutes until biscuits are golden.
  8. Garnish with thyme and serve warm.

Notes

Use pre-cooked chicken to save time. Ensure filling is thick to avoid soggy biscuits.
