- Cook vegetables in butter over medium heat until slightly softened.
- Add flour and seasonings, cook 1–2 minutes.
- Whisk in chicken broth and milk, simmer until thickened.
- Add cubed chicken and season with salt and pepper.
- Preheat oven to 400°F (200°C). Pour filling into a greased 9x13 inch dish.
- Prepare biscuit dough and drop spoonfuls over filling.
- Bake 20–25 minutes until biscuits are golden.
- Garnish with thyme and serve warm.
Notes
Use pre-cooked chicken to save time. Ensure filling is thick to avoid soggy biscuits.
