Ingredients
  

  • 1 lb ground beef
  • 2 tbsp butter
  • 1 onion diced
  • 2 carrots chopped
  • 2 stalks celery chopped
  • 3 cloves garlic minced
  • 1.5 lbs baby potatoes halved
  • 4 cups chicken broth
  • 2 cups whole milk
  • 0.25 cup all-purpose flour
  • 2 cups cheddar cheese shredded
  • salt to taste
  • black pepper to taste
  • 0.5 tsp paprika
  • fresh parsley for garnish

Method
 

  1. Brown ground beef in a large pot and drain excess fat.
  2. Add onion, carrots, and celery and cook until softened.
  3. Stir in garlic and cook until fragrant.
  4. Sprinkle flour over mixture and stir well.
  5. Slowly add chicken broth while stirring.
  6. Add potatoes and seasonings and simmer until tender.
  7. Stir in milk and heat gently.
  8. Add cheese gradually until melted.
  9. Adjust seasoning and serve hot.

Notes

For best texture, add cheese off direct heat.
