Method
- Preheat oven to 350°F (175°C) and line baking sheet with parchment paper.
- Beat cream cheese, sugar, vanilla, and cream until smooth for filling; chill.
- Cream butter with sugars, add egg, vanilla, cocoa powder, and food coloring.
- Fold in flour, baking soda, salt; mix until combined. Stir in chocolate chips if using.
- Divide dough, flatten, add cheesecake filling, wrap and shape into balls.
- Place on baking sheet, bake 12–15 minutes until edges set and tops slightly firm.
- Cool 5 minutes, transfer to wire rack to finish cooling.
Notes
Chill filling for best results; slightly underbake cookies for soft centers.
