Cheesy French Onion Meatloaf

A hearty meatloaf infused with caramelized onions and topped with melted Swiss cheese.

Ingredients
  

  • 1 lb ground beef
  • 1 lb ground pork
  • 2 medium onions finely diced
  • 3 cloves garlic minced
  • 1 cup shredded Swiss cheese
  • 2 eggs large
  • 1 cup breadcrumbs
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 2 tbsp olive oil for sautéing onions
  • 1 large onion thinly sliced for topping
  • 1 tbsp butter for topping
  • 1 tsp sugar for topping
  • 0.5 cup beef broth for topping
  • 0.5 cup shredded Swiss cheese for topping

Method
 

  1. Preheat oven to 375°F (190°C) and prepare loaf pan.
  2. Sauté diced onions and garlic until caramelized.
  3. Combine meats, eggs, breadcrumbs, Worcestershire, thyme, salt, pepper, and sautéed onions.
  4. Fold in shredded Swiss cheese.
  5. Shape into loaf in prepared pan and bake 35–40 minutes.
  6. Caramelize sliced onion topping with butter and sugar, add beef broth and simmer.
  7. Top meatloaf with caramelized onions and shredded cheese.
  8. Bake 5–7 more minutes until cheese melts.
  9. Rest 5–10 minutes before slicing.
