Ingredients
  

Shortbread Dough
  • 1 cup unsalted butter softened
  • 2 cups all-purpose flour
  • 1 cup sharp cheddar cheese finely shredded
  • 0.5 cup parmesan cheese grated
  • 2 jalapeños finely diced, seeds removed
  • 0.75 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Cream butter until smooth.
  2. Mix in cheeses until combined.
  3. Stir in jalapeños, salt, and pepper.
  4. Add flour and mix just until dough forms.
  5. Roll dough into logs, wrap, and chill 1 hour.
  6. Slice into rounds and bake at 350°F for 12–15 minutes.
  7. Cool completely before serving.

Notes

Remove jalapeño seeds for mild heat.
