  • 1 lb bulk pork sausage uncooked, mild or hot
  • 8 oz cream cheese softened
  • 1 10-oz can Rotel diced tomatoes and green chiles drained
  • 1.5 cups Bisquick baking mix
  • 2 cups shredded Mexican cheese blend

Method
 

  1. Preheat oven to 400°F (200°C). Line baking sheets with parchment paper.
  2. Combine sausage, cream cheese, and drained Rotel in a large bowl.
  3. Add Bisquick and shredded cheese; mix until fully combined.
  4. Roll into 1-inch balls and place on baking sheets.
  5. Bake 18-22 minutes until golden and cooked through.
  6. Cool slightly and serve warm.

Notes

Drain Rotel well to prevent soggy balls. Freeze uncooked for later baking. Adjust spice with sausage type.
