Ingredients
  

Potato Layers
  • 2 lbs potatoes thinly sliced
  • 1 onion sliced
  • 2 tbsp butter for greasing
Cheese Sauce
  • 3 tbsp butter
  • 3 tbsp flour
  • 2 cups milk
  • 1 cup cream
  • 2 cups cheddar cheese shredded
  • 0.5 cup Parmesan cheese grated
  • 2 cloves garlic minced
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika optional

Method
 

  1. Preheat oven to 180°C (350°F) and grease baking dish.
  2. Slice potatoes thinly.
  3. Make roux with butter and flour.
  4. Whisk in milk and cream until thick.
  5. Add cheese and seasoning.
  6. Layer potatoes, onions, and sauce.
  7. Top with cheese.
  8. Bake covered 40 minutes, then uncovered 25 minutes.
  9. Rest before serving.
