Method
- Preheat oven to 350°F and line baking sheets with parchment paper.
- Whisk together flour, cocoa powder, espresso powder, baking soda, and salt.
- Cream butter and sugars until light and fluffy.
- Add egg, egg yolk, vanilla, and optional alcohol. Mix well.
- Mix in dry ingredients until just combined.
- Fold in chocolate chips and chill dough 30 minutes.
- Bake cookies 10–12 minutes until edges are set and centers are soft.
Notes
Slightly underbake for the chewiest texture.
