Blondie Batter
  • 1 cup unsalted butter melted and slightly cooled
  • 1.75 cups packed light brown sugar
  • 2 large eggs room temperature
  • 2 tsp pure vanilla extract
  • 2.25 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 1 cup rainbow jimmies sprinkles plus extra for topping
  • 0.5 cup white chocolate chips optional

Method
 

  1. Preheat oven to 350°F (175°C). Line a 9x9-inch baking pan with parchment paper, leaving an overhang on two sides.
  2. In a large mixing bowl, whisk together the melted butter and brown sugar until smooth and glossy.
  3. Add the eggs and vanilla extract, whisking vigorously for 60 seconds until thick and shiny.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gently fold dry ingredients into wet until just combined — do not overmix.
  6. Fold in rainbow jimmies sprinkles and optional white chocolate chips.
  7. Spread batter evenly into the prepared pan and top with extra sprinkles.
  8. Bake 24–28 minutes until edges are golden and center is still slightly soft. Cool completely before cutting.

Notes

For maximum chew, slightly underbake. Use jimmies sprinkles only — they hold color and shape best. Store in airtight container up to 5 days at room temperature.
