  • 1 pound boneless skinless chicken breasts thinly sliced
  • 4 cups broccoli florets fresh or frozen
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
Sauce
  • 2 tablespoons soy sauce low-sodium optional
  • 1 tablespoon oyster sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil divided
  • 0.25 cup chicken broth or water
  • 1 teaspoon sugar or honey optional
  • salt and pepper to taste
  • sesame seeds and green onions for garnish, optional

Method
 

  1. Prepare the sauce: In a small bowl, whisk together soy sauce, oyster sauce, cornstarch, sesame oil, chicken broth, and sugar (if using). Set aside.
  2. Heat the wok or skillet: Place a large wok or non-stick skillet over medium-high heat. Add 1 tablespoon of vegetable oil and swirl to coat.
  3. Cook the chicken: Add the sliced chicken breasts to the hot oil. Season with a pinch of salt and pepper. Stir-fry for 4-5 minutes until browned and cooked through. Remove and set aside.
  4. Sauté the aromatics: In the same pan, add the remaining oil. Toss in minced garlic and grated ginger. Stir-fry for 30 seconds until fragrant.
  5. Add the broccoli: Throw in the broccoli florets. Stir-fry for 2-3 minutes until they brighten and soften slightly.
  6. Combine everything: Return the chicken to the pan. Pour in the sauce. Stir to coat evenly and cook for 2-3 minutes until sauce thickens.
  7. Garnish and serve: Remove from heat. Sprinkle with sesame seeds and green onions if desired. Serve hot over rice or noodles.

Notes

For best results, use high heat and fresh ingredients. Adjust sauce to taste for saltiness.
