Ingredients
  

Chicken
  • 4 boneless skinless chicken breasts
  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 2 large eggs
  • 1 cup buttermilk
  • 0.5 cup milk
  • vegetable oil for frying
Pepper Gravy
  • 4 tbsp butter
  • 4 tbsp all-purpose flour
  • 2.5 cups whole milk
  • 1 tsp black pepper
  • 0.5 tsp salt
  • 0.5 tsp garlic powder
  • fresh parsley for garnish

Method
 

  1. Pound chicken breasts to even thickness about 1/2 inch thick.
  2. Mix flour, salt, pepper, paprika, garlic powder, and onion powder in a shallow bowl.
  3. Whisk eggs, buttermilk, and milk in a second bowl.
  4. Dredge chicken in flour, dip in buttermilk mixture, then dredge again in flour.
  5. Heat oil in a skillet and fry chicken for 4–5 minutes per side until golden and cooked through.
  6. Drain chicken on paper towels.
  7. Melt butter in saucepan and whisk in flour for 1–2 minutes.
  8. Slowly whisk in milk until smooth.
  9. Add pepper, salt, and garlic powder. Simmer until thickened.
  10. Pour gravy over chicken, garnish, and serve warm.
