- Pound chicken breasts to even thickness about 1/2 inch thick.
- Mix flour, salt, pepper, paprika, garlic powder, and onion powder in a shallow bowl.
- Whisk eggs, buttermilk, and milk in a second bowl.
- Dredge chicken in flour, dip in buttermilk mixture, then dredge again in flour.
- Heat oil in a skillet and fry chicken for 4–5 minutes per side until golden and cooked through.
- Drain chicken on paper towels.
- Melt butter in saucepan and whisk in flour for 1–2 minutes.
- Slowly whisk in milk until smooth.
- Add pepper, salt, and garlic powder. Simmer until thickened.
- Pour gravy over chicken, garnish, and serve warm.
