Ingredients
  

Main Dish
  • 4 boneless skinless chicken breasts
  • 1 lb baby potatoes halved
  • 3 cups fresh green beans trimmed
  • 4 tbsp olive oil
  • 3 tbsp butter melted
  • 4 cloves garlic minced
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 0.5 tsp onion powder
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp red pepper flakes optional
  • 0.25 cup Parmesan cheese optional garnish
  • 2 tbsp fresh parsley chopped

Method
 

  1. Preheat oven to 400°F (200°C) and lightly grease a baking dish.
  2. In a bowl, toss potatoes with olive oil, garlic, paprika, thyme, salt, and pepper.
  3. Place seasoned potatoes in the baking dish.
  4. Mix remaining olive oil, butter, oregano, onion powder, and garlic. Coat chicken evenly.
  5. Place chicken in the center of the baking dish.
  6. Toss green beans with olive oil and salt, then arrange around chicken and potatoes.
  7. Bake for 35–40 minutes until chicken is fully cooked and potatoes are tender.
  8. Optional: broil for 2–3 minutes for crispy edges, garnish with Parmesan and parsley before serving.

Notes

You can substitute chicken thighs for extra juiciness or add carrots or mushrooms for more vegetables.
