Ingredients
  

Soup Base
  • 2 cups shredded chicken cooked
  • 2 tbsp butter
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 cups green chiles roasted and chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1.5 cups Monterey Jack cheese shredded
  • 0.5 cup cream cheese softened
  • 1 tsp cumin
  • 0.5 tsp paprika
  • 0.5 tsp chili powder
  • salt and pepper to taste

Method
 

  1. Melt butter and sauté onion until soft.
  2. Add garlic and cook briefly.
  3. Stir in green chiles and cook for a few minutes.
  4. Add broth and bring to a simmer.
  5. Add chicken and spices, stir well.
  6. Mix in cream cheese until smooth.
  7. Add heavy cream and shredded cheese gradually.
  8. Simmer until thick and creamy, then serve.

Notes

Use roasted fresh chiles for best flavor.
