- Marinate sliced beef with cornstarch, soy sauce, and sesame oil for 15–20 minutes.
- Sear beef in batches over high heat until browned and set aside.
- Stir-fry peppers and onions until slightly tender.
- Add garlic and ginger and cook until fragrant.
- Whisk sauce ingredients together and pour into skillet.
- Return beef to skillet and simmer until sauce thickens.
- Garnish and serve hot over rice.

For the most tender beef, always slice thinly against the grain and cook quickly over high heat.
