Method
- Preheat oven to 350°F. Line baking sheets with parchment.
- Cream butter and sugar until fluffy. Beat in egg and vanilla.
- Whisk dry ingredients; add to wet and mix until combined. Fold in chips if using.
- Scoop and flatten dough balls on sheets. Bake 9-11 minutes. Cool completely.
- Heat cream to simmer; pour over chocolate. Let sit, then stir smooth. Add cherry juice and chopped cherries.
- Cool ganache until spreadable. Fill half the cookies and sandwich with the rest.
- Garnish and let set before serving.
Notes
Pat cherries dry to prevent runny ganache. Store in airtight container up to 5 days.
