Ingredients
  

Cookie Dough
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1.5 cups all-purpose flour
  • 0.75 cup unsweetened cocoa powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 0.5 cup mini chocolate chips optional
Rich Cherry Ganache Filling
  • 8 oz semisweet or dark chocolate finely chopped
  • 0.75 cup heavy cream
  • 3 tbsp maraschino cherry juice
  • 0.5 cup maraschino cherries drained, patted dry, finely chopped

Equipment

  • Mixing bowls
  • Electric mixer or stand mixer
  • Baking sheets
  • Parchment paper
  • Saucepan

Method
 

  1. Preheat oven to 350°F. Line baking sheets with parchment.
  2. Cream butter and sugar until fluffy. Beat in egg and vanilla.
  3. Whisk dry ingredients; add to wet and mix until combined. Fold in chips if using.
  4. Scoop and flatten dough balls on sheets. Bake 9-11 minutes. Cool completely.
  5. Heat cream to simmer; pour over chocolate. Let sit, then stir smooth. Add cherry juice and chopped cherries.
  6. Cool ganache until spreadable. Fill half the cookies and sandwich with the rest.
  7. Garnish and let set before serving.

Notes

Pat cherries dry to prevent runny ganache. Store in airtight container up to 5 days.
