  • 1 cup spinach fresh packed
  • 1 cup flour
  • 0.25 cup cocoa powder
  • 0.5 cup sugar
  • 2 eggs
  • 0.33 cup oil
  • 0.5 cup milk
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 0.5 cup chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and prepare muffin tin.
  2. Blend spinach with wet ingredients until smooth.
  3. Mix dry ingredients separately.
  4. Combine wet and dry mixtures and fold in chocolate chips.
  5. Fill muffin cups and bake 18–22 minutes.

Notes

Blend spinach fully for smooth texture and best results.
